°60 g brown sugar
°3 tablespoons of cinnamon
°1 teaspoon nutmeg (grated)
°A little milk (for brushing)
+For the icing:
°100 g icing sugar
°3 tablespoons of fromage blanc (fresh cream, etc.)
*Preparation
+The brioche dough:
Prepare the yeast in 5 cl of lukewarm water. In the bowl of the mixer or in a salad bowl, mix the ingredients, then knead for 15 min. Cover and let stand for 1 hour until the dough doubles in size.
+The shaping:
Butter a round or rectangular mold and flour it.
On your floured work surface, roll out the dough into a rectangular shape. In a bowl, mix the butter, sugar and spices. Spread this mixture all over the surface.
Roll the dough lengthwise. Cut out ten small rolls, place them in the mold, cover with a tea towel and let them rise for 1 hour.
+The cooking :
Preheat the oven to 180°C. Brush the rolls with milk. Put in the oven and cook until they are a little golden...about 15 minutes.
+The icing:
Mix the icing sugar with the fresh cream. Pour this mixture over the still warm rolls.
Enjoy !
