Banana bread



Banana bread cake with cream cheese



*ingredients


+ banana cake

° cup (1 stick) soft butter

°1½ cups of granulated sugar

°2 large eggs

°1 cup full-fat sour cream is best

° 1 teaspoon vanilla

°2 cups all-purpose flour

°1 teaspoon of baking soda

° half a teaspoon of salt

°1 c mash banana is about 3 bananas

+ cream cheese frosting

° c (1 stick) soft butter

°1 bar (8 ounces) of full-fat cheese is best

° 1 teaspoon vanilla

°3 cups of powdered sugar

°2 tablespoons of heavy whipping cream


*Directions


Preheat oven 350 degrees. Preparing 9" x 13" baking dish and spray it with cook spray. sit apart.

In large bowl of  hand mixer, or using stand blender with paddle attachment, cream butter and sugar together to light and fluffy.

The mixture will look crumbly, but whisk it for a few minutes and it will start to come together.

Adding eggs, sour cream & vanilla. Mix them together until they have a creamy consistency.

Add the flour, baking soda and salt. Mixing on low speed to blended.

Adding mash banana and stir gently. Putting mix in baking dish also spread it evenly.

cook 25-35 min The color of edges also top will be light brown.

Leaving cake to cool totally before decorating.

Time  cake has cooled, you can either freeze it and serve or cover it tightly with aluminum foil and leave it at room temperature overnight and then freeze it before serving. 

Make cream cheese

In a large bowl, whisk the butter and cheese together until blended. Stirring in vanilla extract, powder sugar, and heavy cream. Beat together on low speed, increasing as needed, until frosting forms.

Add more powdered sugar and/or milk until desired frosting is achieved. I never have to adding more milk or powder sugar than is call for. You want a really thick frosting for it to chop nicely.
