Mexican Corn Street *




* Ingredients:


° 4 Cobs of Fresh Corn Peeled

° Extra virgin olive oil for fat

° 1 1⁄2 tbsp mayonnaise

° 1 clove garlic, chopped

° Peel and juice lemon 1

° 1 cup green onion, chopped

° 1/3 cheese

1⁄2 c finely chop the coriander

1⁄2 teaspoon of smoked paprika or chilli powder

° 1 chilli sliced into cubes *

°Half a teaspoon of sea salt

Thermal grill to high temperature. Brush the corn with olive oil and grill on each side for 2 minutes. Remove the broth from the grill. Combine mayonnaise, garlic, lemon zest and juice in a bowl. Slice the corn kernels and add them to a bowl with the spring onions. Stir well, then add the cheese, coriander, smoked pepper, jalapeño and salt. Season and eat immediately or cool until cooked. They are a tender
