Cabbage Roll Soup



*Ingredients :

°2 teaspoons olive oil
°Salt and pepper to taste
°1 pound minced beef I use 90�t-free
°1 finely cut onion
°2 teaspoons chopped garlic
°4 cups coiled green, coarse chopped
°2 islands, peeled, cut into quarters and sliced
°4 cups beef broth
°3 8 ounces tomato sauce
°1/2 cup long grain rice uncooked
°3 tbsp brown sugar
° tablespoons parsley

*Instructions

Heat olive oil in saucepan on medium-high heat. Add the mince and season with salt and pepper to taste.
Cook the meat with a spoon until the beef is browned, about 4-5 minutes. Add onion and garlic to cook for 2-3 minutes.
Add cabbage, carrots, beef broth, tomato sauce, rice, bay leaf and brown sugar to the pot. Season with salt and pepper to taste.
Simmer and cook for 25 minutes or until the rice is cooked. Remove and dispose of bay paper. Sprinkle with parsley and serve.
